Choc Beetroot Cake

So what to do when you come off a nightshift, have a little sleep and then have an arvo with a 3 year old while your brain feels like fuzz? You make yummy beetroot cake!

I bought a bunch of baby beets on special while food shopping this week but was a little stuck as to what to make with them. While cruising my favourite blogs i came across huntergathererforager ‘s post about her home grown beets (hoping to get to that stage later this year) and making a choc beetroot cake… how could i resist? You will need:

300g beetroot
200g dark cooking chocolate
200g salted butter (or coconut oil)
1C Brown sugar (I used half a cup brown sugar as that was all i had and the other half white but  you could use stevia too)
1tablespoon cacao or cocoa
6 eggs
1c almond flour (or plain flour)

Method
Chop you beetroot and boil for 30mins or until soft enough to puree. Puree it 😉

Preheat oven to 160 celsius and grease your cake tin

In a metal bowl in your chopped up butter and cooking chocolate and pop it in the oven to melt (you could also microwave or use the stove top but you save energy and washing up this way)

After 5 minutes take it out and mix together until smooth.

Add sugar and cocoa and mix
Add eggs one at a time beating after each one

Add beetroot and almond flour (or plain flour) mix until smooth and silky then pour into your cake tin.

Bake for 40 mins or until knife comes out clean.

We served ours with a little sweetened cream and a blackberry syrup… Yummo!

  1. Yum! I’m so happy the recipe worked out. Even though you used a metal bowel 😝 (haha hubby points out my spelling mistakes all the time glad I’m not the only one!)might have some beetroot seeds for you to try later on. I buy from boondie seeds online who have a great heritage variety but I’m slowly trying to save my own 🙂
